Asparagus with Eggs & Cheese

 

Serves : 4

 

Ingredients:

 

1.5kg / 3lb Asparagus

4 Eggs

6 tbsp / 75g / 3oz Butter

3 tbsp Grated Parmesan Cheese

 

Instructions:

 

  1. Clean the asparagus and cut off tough stalk ends; boil or steam asparagus.

 

  1. Drain and arrange on a heated serving dish.

 

  1. Fry the eggs in about 4 tbsp / 50g / 2oz butter

 just until set.

  1. Heat the remaining butter separately.

  1. Sprinkle the parmesan on the asparagus, put the just-set eggs carefully on top, then drizzle with melted butter.

  1. Serve at once while piping hot.
