Backhähnchen Nach Süddeutscher Art – Ginger Crumbed Fried Chicken

 

Serves: 6

 

Ingredients:

 

1.5kg / 3lb Chicken

Salt

2 Eggs, whipped

1 cup / 4oz Dry Breadcrumbs

½ cup / 2oz Grated Parmesan Cheese

¼ tsp Powdered Ginger

60g / 2oz Butter

3 tbsp Olive Oil

6 Lemon Wedges

 

Instructions:

 

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6.

  2. Cut the chicken into serving-sized pieces, rub them with salt, dip them in the egg, and roll them in a mixture of breadcrumbs, cheese and ginger.

  3. Heat the oil and butter in a frying pan and brown the chicken on all sides.

  4. Transfer the chicken to a roasting tray and bake for 20 – 30 minutes in the oven.

  5. Serve the chicken pieces arranged on a platter, garnished with the lemon wedges.
