Baked Stuffed Sardines

 

Serves : 4

 

Ingredients:

 

16 Fresh Sardines

2 tbsp Vinegar

Salt & Pepper

cup / 75g / 3oz Mixed Chopped Garlic, Chopped Parsley and Grated Parmesan Cheese

Plain (All-Purpose) Flour

2 Eggs, beaten

Breadcrumbs

Olive Oil

Lemon Wedges

 

Instructions:

 

  1. Preheat the oven to 375°F / 190°C / Gas Mark 5.

 

  1. Clean the sardines, removing the heads and tails, open them out and remove the bones. Wash and pat dry. Arrange on a big dish, sprinkle with vinegar, salt & pepper and stuff each one with garlic, parsley and cheese mixture.

 

  1. Close the fish up again, pressing down well; dip them first in flour, then in beaten egg and then in breadcrumbs.

 

  1. Put the sardines in a greased baking dish, sprinkle with oil and bake for 25 – 30 minutes. Serve with lemon wedges.
