Bettelmann – Beggar’s Dessert
Serves: 6
Ingredients:
345g / 11oz Dark Rye Bread, 2 – 3
days old
1 cup / 8 floz
Apple Juice
1˝ cups / 12 floz
Dry White Wine
750g / 1˝lb Green Cooking Apples, peeled, cored
and thickly sliced
5 tbsp Sugar
˝ tsp Cinnamon
˝ tsp / 3oz Raisins
60g / 2oz Butter
Instructions:
- Preheat
the oven to 200°C / 400°F / Gas Mark 6.
- Cut
the bread into small cubes, place in a bowl and pour the apple juice and
wine over it.
- Butter
an ovenproof earthenware or glass dish. Place one thick layer of the bread
on the bottom, and on top of that place a layer of apples. Sprinkle
with cinnamon
and sugar.
Continue layering until the bread and apples are used
up. Cover the final layer of apples with raisins and
finish with a layer of bread.
- Dot
the top layer with knobs of butter and cook in
the oven for approx 45 minutes. Serve hot.
