Bettelmann – Beggar’s Dessert

 

Serves: 6

 

Ingredients:

 

345g / 11oz Dark Rye Bread, 2 – 3 days old

1 cup / 8 floz Apple Juice

1˝ cups / 12 floz Dry White Wine

750g / 1˝lb Green Cooking Apples, peeled, cored and thickly sliced

5 tbsp Sugar

˝ tsp Cinnamon

˝ tsp / 3oz Raisins

60g / 2oz Butter

 

Instructions:

 

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6.

  2. Cut the bread into small cubes, place in a bowl and pour the apple juice and wine over it.

  3. Butter an ovenproof earthenware or glass dish. Place one thick layer of the bread on the bottom, and on top of that place a layer of apples. Sprinkle with cinnamon and sugar. Continue layering until the bread and apples are used up. Cover the final layer of apples with raisins and finish with a layer of bread.

  4. Dot the top layer with knobs of butter and cook in the oven for approx 45 minutes. Serve hot.
