Broccoli with Green Pepper & Garlic

The parmesan is as much for grain as for taste - hence the small quantity.

 

Serves : 4 – 6

 

Ingredients:

 

675g / 1½lb Fresh Broccoli

Salt to taste

30ml / 1fl oz Olive Oil

1 Small Green Pepper, deseeded and finely sliced

4 Cloves Garlic

¾ tbsp Freshly Grated Parmesan Cheese

Freshly Ground Black Pepper

 

Instructions:

 

  1. Bring plenty of salted water to the boil.

 

  1. Drop in the trimmed broccoli florets and boil for 3 minutes.

 

  1. Drain them and stop the cooking process by plunging them immediately into cold water.

 

  1. Heat the olive oil over a high flame.

 

  1. Cook the pepper in the oil until the slices begin to brown slightly at the edges.

 

  1. Reduce the heat to a simmer and add the garlic cloves, well crushed.

 

  1. Cook the pepper and garlic together for 1 – 2 minutes.

 

  1. Add the broccoli and the grated parmesan cheese, turn in the oil and parmesan until the broccoli is hot.

 

  1. Serve immediately, lavishly sprinkled with the pepper.
