Bucatini with Red Lentil Sauce

Pasta from the microwave.

 

Serves : 4

 

Ingredients:

 

1 tbsp Oil

1 Onion, chopped

1 Clove Garlic

, chopped

¾ cup / 200g / 7oz Canned Tomatoes, drained and mashed

Salt & Freshly Ground Black Pepper

Scant cup / 125g / 5oz Red Lentils

1¼ cups / 300ml / ½ pint Boiling Water

3½ cups / 400g / 14oz Bucatini

Parmesan Cheese

Instructions:

  1. Put the oil in a dish and cook on full power for 30 seconds.

  1. Add the onion and garlic, cover and cook on full power for 2 minutes.

  1. Add the tomatoes and seasoning. Set aside.

  1. Put the lentils in a pot and pour over the boiling water.

  2. Cover and cook on full power for 12 minutes.

  3. Stir in the tomato sauce and set aside.

  1. Put the bucatini in a deep pot. Cover with boiling water and add a few drops of oil.

  2. Cover and cook on full power for 9 minutes.

  3. Set aside while you reheat the sauce.

  1. Drain the bucatini, stir in the sauce and serve topped with plenty of grated parmesan cheese.
