Chicken & Mushroom Lasagne

 

Serves : 4 – 6

 

Ingredients:

 

1 Onion, peeled and diced

2 tbsp / 25g / 1oz Butter

2 cups / 100g / 4oz Mushrooms, washed and sliced

2 cups / 350g / 12oz Cooked Chicken, diced

2 tbsp Fresh Breadcrumbs

2˝ cups / 600ml / 1 pint Béchamel Sauce

3 tbsp / 25g / 1oz Grated Parmesan Cheese

9 Sheets Lasagne

Salt & Freshly Ground White Pepper

 

Instructions:

 

  1. Preheat the oven to 350°F / 180°C / Gas Mark 4.

 

  1. Cook the onion in the butter over a low heat for about 3 minutes.

 

  1. Add the mushrooms and cook for a further 2 minutes.

 

  1. Add the chicken to the mushroom and onions, season well and mix with chopped parsley.

 

  1. Make up the béchamel sauce, season well.

 

  1. Place about 4 tbsp sauce in the bottom of an ovenproof dish. Cover with one third of the chicken mixture. Place sheets of "non-cook" lasagne on top to cover. If using fresh it can be cooked in boiling water for 3 minutes.

 

  1. Place a further 4 tbsp sauce on top of the lasagne and a further third of the chicken mixture. Continue with third layer of lasagne, and top with the remaining béchamel sauce.

 

  1. Mix the fresh crumbs with the cheese and sprinkle on top. Bake in the oven for 25 minutes until golden brown.
