Country-Style Courgettes (Zucchini)
This dish can be served hot but is also delicious lukewarm or
cold.
Serves : 4
Ingredients:
450g / 1lb Courgettes (Zucchini)
1 Egg
Salt
⅓ cup
/ 40g / 1½oz Breadcrumbs
Butter
Vegetable Oil
1 Onion, sliced
450g / 1lb Tomatoes, peeled,
seeded, chopped
1½ tsp Sugar
Pepper
½ cup / 50g / 2oz Grated Parmesan Cheese
1 tbsp Chopped Fresh Basil
4 Fresh Mint Leaves, chopped
Instructions:
- Preheat
the oven to 350°F / 180°C / Gas Mark 4.
- Cut
the ends off the courgettes
(zucchini) and cut lengthways.
- Beat
the egg with a
little salt.
- Dip
the courgettes
(zucchini) in egg,
and then in breadcrumbs.
- Melt
a little butter
in a pan with some oil
and fry the courgettes
(zucchini) until golden. Drain on paper towels. Set aside.
- Heat
¼ cup / 4 tbsp oil
in a pan and cook the onion for 5
minutes.
- Add
the tomatoes,
sugar,
salt & pepper, cover and
cook over medium heat for 30 minutes, stirring occasionally.
- Butter
a baking dish, put in a layer of courgettes
(zucchini), cover with a little tomato sauce, sprinkle with parmesan, basil and mint, and continue
the layers like this until all the ingredients have been used up. End with
sauce and bake for 15 minutes.
