Croquettes with Mozzarella &
Tomato
Serves : 4
Ingredients:
450g / 1lb Minced (Ground) Beef
5 Large Slices Stale Bread,
crusts trimmed, soaked in water and squeezed dry
4 tbsp Chopped Parsley
6 tbsp / 50g / 2oz Grated Parmesan Cheese
Salt & Pepper
2 Eggs, beaten
1 cup / 175g / 6oz Diced Mozzarella Cheese
Plain (All-Purpose) Flour
Vegetable Oil
2 tbsp Chopped
Onion
Coarsely Chopped Fresh Basil
450g / 1lb Tomatoes, peeled,
seeded, pressed through a strainer
Instructions:
- Combine
the beef, bread,
parsley and parmesan in a
bowl.
- Season
with salt & pepper, then blend in the eggs.
- Form
the mixture into four oblong croquettes and press the mozzarella
into them; re-shape the croquettes. Roll in the flour and fry in
plenty of hot oil.
- Meanwhile,
fry the onion
in a pan with a few tbsp oil, add the tomatoes, season
and cook over a medium heat for about 20 minutes.
- Arrange
the croquettes in the simmering sauce and leave to absorb the flavours,
scooping the sauce on top. Garnish with basil.
