Fischauflauf – Fish Soufflé

A food processor or mincer can be used in the preparation of this dish.

 

Serves: 6

 

Ingredients:

 

600g / 1⅓lb Cooked Fish Fillets

3 Stale Bread Rolls, soaked in water

1 Onion, finely chopped

Salt

Freshly Ground Black Pepper

1 cup / 8 floz Sour Cream

4 Eggs, separated

3 Anchovy Fillets, cut into small pieces

½ cup / 2oz Grated Parmesan Cheese

 

Instructions:

 

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6.

  2. Mince the fish, bread rolls (well squeezed out), onion and parsley in the food processor or mincer.

  3. Add the salt, pepper, sour cream and egg yolks.

  4. Whip the egg whites until they are stiff and fold them into the mixture. Mix in the anchovies.

  5. Pour the mixture into a buttered soufflé with the cheese 10 minutes before taking it out of the oven.

  6. Serve hot with the salad of your choice.
