Fried Stuffed Sardines
Serves : 4
Ingredients:
16 Fresh Sardines
Olive Oil
2 tbsp Dried Mushrooms, soaked,
drained
1 tbsp Fresh Breadcrumbs,
softened in a little milk
and squeezed dry
1 tbsp Grated Parmesan Cheese
1 Clove Garlic
, crushed
1
tsp Chopped Fresh Marjoram
Pinch
of Dried Oregano
4
Eggs
Salt & Pepper
Plain
(All-Purpose) Flour
Fine Dry Breadcrumbs
Instructions:
- Clean
the sardines,
removing the heads and tails. Open them out, remove the bones, wash and
pat dry.
- Heat
a little olive
oil in a frying pan (skillet), chop the mushrooms
finely and fry gently for a few minutes.
- Transfer them
into a dish and add fresh breadcrumbs, parmesan, garlic, marjoram, oregano, two eggs and a pinch of
salt.
- Stuff
the sardines
with this mixture, then close them up.
- Beat
the remaining two eggs
with salt
& pepper.
- Dip the stuffed
sardines first into flour, then into
seasoned beaten egg, then into dry breadcrumbs.
- Fry
in hot oil
and serve immediately.
