Gratin of Ravioli with Cream

 

Serves : 4

 

Ingredients:

 

FOR THE PASTA:

cups / 200g / 7oz Plain (All-Purpose) Flour

Salt

5 Eggs

1 tbsp Oil

 

FOR THE FILLING:

2 tbsp Chopped Onion

3 tbsp Butter

cups / 350g / 12oz Finely Diced Sausage

2 tbsp Breadcrumbs

Salt & Pepper

2 Egg Yolks

2 tbsp Grated Parmesan Cheese

 

FOR THE SAUCE:

½ cup / 100g / 4oz Butter

5 tbsp Grated Parmesan Cheese

About 1 cup / 300ml / ½ pint Top of the Milk (half & half)

 

Instructions:

 

  1. Preheat the oven to 400°F / 200°C / Gas Mark 6.

 

  1. For the pasta, follow the instructions for Homemade Pasta, mixing a pinch of salt with the flour.

 

  1. For the filling, soften the onion in butter, add the sausage, breadcrumbs, salt and pepper and cook gently for 10 minutes.

 

  1. Transfer the sauce to a bowl and allow it to cool.

 

  1. Mix in the egg yolks and parmesan.

 

  1. Assemble the ravioli according to the instructions for Ravioli. Boil the ravioli in plenty of salted water for about 7 minutes or until they rise to the surface of the water and lose their pasty appearance.

 

  1. Drain and arrange in a baking dish in layers; dot each layer with butter, sprinkle with parmesan and drizzle with top of the milk (half & half). Bake until golden brown.
