Green Tagliatelle with Peppers

Pasta from the microwave.

 

Serves : 4

 

Ingredients:

 

1 tbsp Olive Oil

1 Small Onion, chopped

1 Clove Garlic, crushed (minced)

1½ cups / 400g / 14oz Canned Tomatoes, drained

Salt & Freshly Ground Black Pepper

½ Red Pepper, cut into strips about 2.5cm / 1 inch long.

½ Green Pepper, cut into strips about 2.5cm / 1 inch long.

½ Yellow Pepper, cut into strips about 2.5cm / 1 inch long.

2 tbsp Water

400g / 14oz Spinach Tagliatelle

Salt

Parmesan Cheese

 

Instructions:

 

  1. Put the oil in a bowl and cook on full power for 30 seconds.

 

  1. Add the onion and garlic and cook on full power for 2 minutes. Purée in a liquidizer and season to taste.

 

  1. Put the pepper strips in a bowl and add the water. Cover with vented clingfilm (plastic wrap) and cook for 4 minutes, until tender. Set aside.

 

  1. Put the tagliatelle in a deep pot and just cover with boiling water.

 

  1. Add a pinch of salt and a few drops of oil, cover and cook on full power for 6 minutes. Leave to stand for 3 minutes. Reheat the sauce if necessary during standing time.

 

  1. Drain the pasta, pour over the sauce and garnish with the strips of pepper.

 

  1. Serve with parmesan cheese.
