Grilled Mussels

 

Serves : 4 – 6

 

Ingredients:

 

1kg / 2 lb Fresh Mussels

2 cups / 100g / 4oz Fresh Breadcrumbs

½ cup / 50g / 2oz Freshly-Grated Parmesan Cheese

4 tbsp Finely Chopped Parsley

4 Large Cloves Garlic, finely chopped

Salt & Freshly Ground Black Pepper to taste

cup / 150ml / ¼ pint Olive Oil

 

Instructions:

 

  1. Preheat the oven to 400°F / 200°C / Gas Mark 6.

 

  1. Thoroughly scrub the mussels, removing all beards and barnacles.

 

  1. Place a pan of water large enough to hold them all on a low heat, add the mussels and cover. Cook for about 5 minutes.

 

  1. In the meantime, combine the breadcrumbs, parmesan, parsley, garlic, salt & pepper in a bowl.

 

  1. Take the mussels off the heat, drain, and set aside the liquor.

 

  1. Remove the top shell from each mussel, leaving the flesh ensconced in the lower shell. Discard any mussels which have failed to open. Lay the half-shell mussels on a baking tray and sprinkle the breadcrumb mixture into each shell.

 

  1. Combine the oil and the reserved mussel liquor and pour a little on to each mussel. Return stuffed mussels to a hot grill (broiler), or the preheated oven, and bake for 3 – 4 minutes.
