Grilled Mussels
Serves : 4 – 6
Ingredients:
1kg / 2 lb Fresh Mussels
2 cups / 100g / 4oz Fresh Breadcrumbs
½ cup / 50g / 2oz Freshly-Grated Parmesan Cheese
4 tbsp Finely Chopped Parsley
4 Large Cloves Garlic, finely chopped
Salt & Freshly Ground
Black Pepper to
taste
⅔ cup
/ 150ml / ¼ pint Olive
Oil
Instructions:
- Preheat
the oven to 400°F / 200°C / Gas Mark 6.
- Thoroughly
scrub the mussels,
removing all beards and barnacles.
- Place
a pan of water large enough to hold them all on a low heat, add the mussels and
cover. Cook for about 5 minutes.
- In
the meantime, combine the breadcrumbs, parmesan, parsley, garlic, salt & pepper in a bowl.
- Take
the mussels
off the heat, drain, and set aside the liquor.
- Remove
the top shell from each mussel, leaving
the flesh ensconced in the lower shell. Discard any mussels which
have failed to open. Lay the half-shell mussels on a
baking tray and sprinkle the breadcrumb
mixture into each shell.
- Combine
the oil and
the reserved mussel liquor and pour a little on to each mussel. Return
stuffed mussels
to a hot grill (broiler), or the preheated oven, and bake for 3 – 4 minutes.
