Hay & Straw with Cream & Raw Ham

 

Serves : 4

 

Ingredients:

 

225g / 8oz Plain Noodles

225g / 8oz Green (Spinach) Noodles

Salt

1¼ cups / 300ml / ½ pint Double (Heavy) Cream

1 tbsp Finely Chopped Fresh Sage

1 tbsp Finely Chopped Fresh Parsley

cup / 150ml / ¼ pint Dry White Wine

100g / 4oz Parma Ham

2 tbsp Butter

 

Instructions:

 

  1. Cook the pasta in the usual way.

 

  1. Bring the double (heavy) cream to the boil, and then add the sage, parsley and dry white wine. Keep boiling to reduce the volume of liquid by one third (i.e. to the original volume of the cream).

 

  1. When this is done, dice the ham and add it to the cream. Remove from the heat.

 

  1. When the pasta is cooked, drain it and whisk in the butter. Toss it in the mixture and serve very hot.
