Heringssalat Rheinischer Art – Rhineland Herring, Apple and Vegetable Salad

 

Serves: 6

 

Ingredients:

 

6 Pickled Herring Fillets, chopped

155g / 5oz Beetroot, cooked and diced

1 Large Apple, cored and diced

2 Medium Potatoes, cooked and diced

1 Small Onion, finely chopped

½ cup / 2oz Chopped Walnuts

½ cup / 4 floz Sour Cream

½ cup / 4 floz Mayonnaise

1 tsp Sugar

1 Egg, Hard-boiled and sliced for garnish

6 – 8 Slices Beetroot for Garnish

1 tbsp Finely Chopped Parsley or Dill

 

Instructions:

 

  1. Combine all the ingredients except the egg, sliced beetroot, and parsley or dill. Mix the ingredients gently together and arrange them in a salad bowl or on a serving platter.

  2. Decorate the top with the egg slices and the beetroot. Before serving, sprinkle with the parsley or dill.
