Lachstüten mit Meerrettich Rahm – Salmon with Horseradish Cream

In Germany, horseradish cream is a popular garnish for smoked salmon.

This is one of the many ways it can be served.

 

Serves: 4

 

Ingredients:

 

1 cup / 8 floz Cream, whipped

1 tbsp Horseradish Relish

1 tbsp Vinegar or Juice of 1 Lemon

½ tsp Sugar

Salt

Freshly Ground Black Pepper

1 tsp Gelatine, dissolved in ¼ cup / 2 floz Hot Water, cooled

12 Slices Smoked Salmon

2 Sprigs Parsley, finely chopped

 

Instructions:

 

  1. Combine all ingredients except the smoked salmon and parsley.

  2. Form the salmon slices into cones and, with a teaspoon or piping bag, fill the cones with the cream.

  3. Arrange the cones on a serving platter and refrigerate for 2 hours or until cream hardens.

  4. Serve chilled, the cream sprinkled with parsley.
