Linguine with Green Beans & Pumpkin Seeds

Pasta from the microwave.

 

Serves : 4

 

Ingredients:

 

2 cups / 250g / 8oz French (Green) Beans, topped and tailed (trimmed) and cut into bite size pieces

2 tbsp Water

¾ cup / 250g / 8oz Tomatoes, peeled, seeded and cut into strips

50g / 2oz Pumpkins Seeds

400g / 14oz Green Linguine

Salt

1 – 2 tbsp Oil

Parmesan Cheese (Optional)

 

Instructions:

 

  1. Put the beans in a dish with the water, cover with vented clingfilm (plastic wrap) and cook on full power for 4 minutes.

 

  1. Add the tomatoes and cook on full power for a further 4 minutes.

 

  1. Add the pumpkin seeds. Keep covered and keep warm.

 

  1. Put the linguine in a deep pot with enough boiling water to cover.

 

  1. Add a pinch of salt and a few drops of oil. Cover and cook on full power for 8 minutes then set aside, covered.

 

  1. Drain the vegetables and dress with the oil. Reheat, covered, for 1 minute.

 

  1. Drain the pasta and mix in the dressed vegetables.

 

  1. Serve with parmesan cheese if liked.
