Pasta with Chickpeas (Garbanzos)

Pasta from the microwave.

This is a very simple dish called "Thunder & Lightning" in Italy. Make it with canned chickpeas (garbanzos) to save time.

 

Serves : 4

 

Ingredients:

 

3½ cups / 400g / 14oz Multi-Coloured Pasta

Salt

1 tbsp Oil

2 tbsp / 25g / 1oz Butter

1 Clove Garlic, crushed (minced)

2 cups / 400g / 14oz Canned Chickpeas (Garbanzos), drained

⅓-½ cup / 50-75g / 2-3oz Freshly Grated Parmesan Cheese

Freshly Ground Black Pepper

 

Instructions:

 

  1. Put the pasta in a bowl and just cover with boiling water.

 

  1. Add a pinch of salt and a few drops of oil, cover and cook on full power for 10 minutes. Allow to stand, covered.

 

  1. Put the butter in a bowl and cook on full power for 1 minute.

 

  1. Stir in the garlic and chickpeas (garbanzos), cover and cook for 2 minutes.

 

  1. Drain the pasta. Pour over the oil and the garlic chickpeas (garbanzos) and add the parmesan cheese.

 

  1. Stir and serve at once. Offer black pepper at the table.
