Spaghetti with Chicken Livers

 

Serves : 4

 

Ingredients:

 

450g / 1lb Chicken Livers, diced

1 Red Pepper, seeded

1 Clove Garlic

, crushed

4 tbsp / 50g / 2oz Butter

Salt & Freshly Ground Pepper

4 Tomatoes, skinned and chopped

2 Basil Leaves, chopped

450g / 1lb Spaghetti

Oil

Freshly Chopped Parsley (Optional)

 

Instructions:

 

  1. Prepare the chicken livers by cutting into small pieces.

 

  1. Cut and dice the pepper finely. Blanch it for 2 minutes in water that has just boiled and drain.

 

  1. Crush the garlic.

 

  1. Melt the butter in a frying pan and simmer the garlic and pepper for 5 minutes.

 

  1. Add the chicken livers and stir round, mixing with the pepper.

 

  1. Cook for 5 – 6 minutes on a low heat.

 

  1. Add the tomatoes, basil and seasoning.

 

  1. While the sauce is simmering cook the spaghetti in boiling salted water with a few drops of oil.

 

  1. Drain and mix well with the chicken liver sauce.

 

  1. Each portion can be garnished finally with some freshly chopped parsley.
